2 Easy Crockpot Recipes for New Year’s Eve

Let’s face it, most of us like to cook up something easy on New Year’s Eve. Who wants to spend a lot of time in the kitchen when you could be spending more time with your family and friends? (Thank goodness for crockpot recipes.) I know this year we may not be ringing in the new year like we normally do, but that shouldn’t stop us from enjoying the dishes we like to eat.

Here are a couple of crockpot recipes I usually make for my family that I wanted to share with you. They are not only easy to make but, always a hit at parties, potlucks, and BBQs! Hope you indulge, enjoy, pass along, and have a Happy New Year! ~ April Monterrosa, Editor-in-Chief.

Chunky Spicy Cheese Dip Recipe

What you need:

Large Crock pot
Crock pot liners (for easy clean up)

Ingredients:

1 lb. Jimmy Dean sausage, browned and drained (hot or mild depending on how much spice you like)
1 lb. 100% lean ground beef, browned and drained
2 1-pound block of Velveeta cheese, cut into large cubes (I have used other brands such as HEB, Hill Country Fare, & even Dollar General; Velveeta is the best, D.G was the runner up)
2 10-ounce cans (undrained) of Rotel diced tomatoes with green chilies (hot or original depending on how much spice you like)
Bags of Corn Chips
*At my house we like it SPICY…so I use hot Rotel & spicy Jimmy Dean*

Directions:

Combine all ingredients in crockpot. Place crockpot on LOW heat setting. Cover with lid and heat one hour. Keep on LOW setting until ready to serve. Serves 8-10. Enjoy! *For larger parties, double up on all ingredients. Don’t forget the Tostitos Scoops for dipping!

Crock-Pot Broccoli Rice & Cheese Casserole

What you need:

1/2 cup (1 stick) butter
1 package (16 ounces) frozen chopped broccoli
1/3 cup milk
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Chicken & Herb Soup
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Mushroom Soup
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Broccoli Soup
1 jar (8 ounces) pasteurized process cheese sauce (like Cheez Whiz)
2 cups minute white rice
1 cup of warm water
Large Crock-Pot

Directions:

Heat the butter in your crock-pot high on heat.
Stir the broccoli, milk, soups, and rice.
Bake at high heat for about 20-30 minutes, stirring every 5 or 10 minutes until the mixture is hot and bubbling.
Then add cheese.
After its ready, set your crock pot on low or warm. Then serve.
